Here are a couple finished models.
I didn't do a step by step on these two but you may recognise them in the sculpting phase pictures. I decided to turn the little Friesian into a rearing Gypsy Vanner.
He's in MH$P right now.
Here is the other little Andalusian I was working on that has the braided mane and tail.
